Canestrato - Pecorino Cheese
Striped-rind cheese made with sheep's milk curdled with goat rennet. It can be used as a table cheese or grated if mature.
Cylinder-shaped, slightly bowed. Straw-yellow rind which gets darker through maturation.
From 1,8/2,5 kg.
16/18 cm diameter.
Tangy and pleasantly spicy when mature.
Minimum 120 days.
Whole cheese 180 days.
