Pepato - Pepper-flavored Pecorino Cheese

Description

Semi-cooked table cheese, made by whole sheep's milk, from free range breeding of Sardinia. Curdled with kid rennet and with addition of pepper in layers in the moulding stage.

Shape

Cylinder-shaped, striped straw-yellow rind, brown in aged cheese.

Weight and Size

From 13 to 15 kg - Diameter 25/30 cm, height 10/15 cm.

Texture

Compact interior or with sparse small eyes. With white color texture, tending to straw yellow when mature.

Taste and flavor

Tasty and intense, spicy, with lingering vegetable aromas.

Maturation

From 4 to 6 months.

Shelf life

180 days.
