Whole sheep's milk cheese, from free range breeding of Sardinia, curdled with lamb's rennet paste, with a characteristic spicy taste. It can be used as a table cheese or grated according to maturation. Pecorino Romano is a PDO cheese - Protected Designation of Origin with the stamp, impressed on every wheel, certifying its authenticity.
Cylinder-shaped, with straight sides and flat faces, white color covering.
From 20 to 24 kg.
Compact texture, white or light straw-yellow color.
Pleasant, rich and slightly spicy.
Minimum 5 months.
