Produced from free range goat's milk with season-based feeding according to the characteristics Sardinian fodder pastures and scrub.

Shape and Weight

Cylinder-shaped, straight sides, smooth rind - 2/2,5 kg.

Texture

Semi-cooked cheese; white or straw-yellow when mature; sweet and strechy; granular if mature.

Taste

Tasty, sweet and acidulous, pleasantly spicy when mature.

Maturation

Minimum 90 days up to 180.

Shelf life

Whole cheese 180 days.

Caciottina

Weight

800 gr/1 kg.

Texture and Taste

White and smooth creamy rind, with small eyes. Tasty, sweet or slightly acidulos.
